CUL 144 Menu Design and Pairing
A study of restaurant menu descriptions, format layouts, terminology and designs based on restaurant concept, location or theme. Chef preparation for menu organization, ordering, managing and handling food cost are integrated in this course. Focus is on menu planning while pairing food, wine and craft beer to complement each other during themed dinner service open to the public at our student run restaurant. Pre/Corequisite: CUL 127 and CUL 128.
