CUL 127 Basic Food Preparation I

A survey of equipment safety, sanitation, knife skills, basic stocks, sauces, and soups. Focus is on theories and techniques of classical recipe preparation. Skills will be developed through actual work experience and related lessons during lab. An approved chef's uniform and a cutlery set are required for all labs.
