CUL 139 Pastry and Dessert Preparation
An advanced pastry and dessert preparation course that integrates advanced skills and techniques of speciality dessert and pastry production. Focus is on the properties and characteristics of staple ingredients. Various techniques will be utilized in complex dessert preparation and quantity production while exploring innovative decoration methods. Pre/Corequisite: CUL 127, CUL 128, CUL 130 and CUL 132.
