CUL 148 Cooking/Baking Special Diets

This course explores the skills and techniques needed to address the modern consumer’s special dietary needs. Coursework will focus on the wide range of dietary challenges in cooking and baking that professionals should be conscious of while introducing innovative flavors, healthy ingredients, allergens, and substitution techniques for special diets.
